CI: follow XDG spec more closely in AppImage script

- Misplaced $D
 - Set XDG_*_DIRS without the /calamares/ trailer
 - Don't overwrite XDG_*, but append for AppImage, avoid unnecessary :
 - Explain XDG_* tweaks in the AppImage documentation at the top.
